“The opportunity to keep my spice journey evolving on Lizard Island will be exciting. I look forward to working with Mark Jensen and the local produce of the region to bring some truly amazing flavours to life during the Master Class and dinner events,” said Shane Delia.
Mark Jensen knows and understands Lizard Island and the seasonal produce of tropical north Queensland better than most – as he is currently enjoying his second stint as Executive Chef for the island. Mark firmly believes that the local farmers, fishermen and producers in and around Cairns are his true partners in the kitchen working closely with each to create seasonally evolving dishes which showcase the region.
“This is our second Food and Wine Event this year – and the spice theme just plays perfectly into my true culinary passion for complexities and varieties of the spices of South East Asia. Working with Shane will be a highlight,” commented Mark Jensen.
Guests attending the Food and Wine Event will receive a signed copy of Shane Delia’s most recent book – Spice Journey and a selection of Maha spices as a take home gift.
